Double Chocolate Oatmeal Cookies

Hello my lovelies, I come bearing more temptation.

Because that’s how I roll.

Today’s offering is a nice, simple cookie (that is, soft on the inside) that also doubles as a nice hit of fibre. You can do your digestion some good while making your taste buds do the happy dance.

The Double Chocolate referred to is a charming combination of Cocoa (antioxidants!) and Choc chips – the oatmeal (for my Aussie readers) is rolled oats. Really, it’s practically a health food and should be considered suitable for breakfast…

Let us begin.

Get your butter out of the fridge to soften and preheat your oven to 180°C/ 350°F. If you have a stand mixer, fit the paddle attachment and make yourself a cuppa until the butter is softened. You may also wish to pummel a block of dark cooking chocolate should you not wish to use choc chips – like I did.

Cream together the butter and sugars for about 4 minutes. I must confess that, when making this batch, I left out the brown sugar completely as I became distracted by something.

They still turned out beautifully, just not as sweet. Health food, dontchaknow?

After you’ve reached the soft and fluffy consistency, add a dash of vanilla extract and two whole eggs. Beat until thoroughly combined.

At this point most of the dry ingredients can be combined and sifted into a bowl.

Add this to the mixing bowl and stir until just combined. Then add the rolled oats and repeat.

Stir those in and add the chocolate pieces. I prefer to use bits from a smashed up block of cooking chocolate, because it gives a different texture to the finished product. You’ll end up with pools of chocolate that blend nicely into the mix. Choc chips are designed to retain their structural integrity and remain recognisable after baking.

You can use whichever method you like. They’re your cookies.

Then, drop rounded spoonfuls onto a lined baking sheet and bake for 8-10 mins.

Leave them to cool on the tray for about 5 minutes before you attempt to move them to a cooling rack. It will save on tears.

Ingredients

70 g softened, unsalted butter

½ cup white sugar

1½ cups brown sugar, firmly packed

2 eggs

1 tsp vanilla extract

1½ cups plain flour

1/3 cup unsweetened cocoa powder

1 tsp baking powder

¼ tsp baking soda

¼ tsp salt

2 cups rolled oats (not quick or minute oats)

1 cup dark chocolate chips.

Method

Heat the oven to 180°C/375°F.

Using an electric mixer and a paddle attachment if possible, cream butter and both sugars together until light and fluffy. This will take about 4 minutes.

Add the eggs and vanilla extract and beat until thoroughly combined.

In another bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt.

Sieve into your butter mixture and blend until just combined.

Stir in the oats.

Stir in the choc chips.

Drop in rounded tablespoons onto a lined baking sheet. Do not flatten.

Bake for 8-10 minutes until set. Cooked cookies will be soft to the touch.

Allow to cool on the baking sheet for 5 minutes before removing to a cooling rack.

Store in an airtight container.

Irish Soda Bread

We make our own bread in the Budget Bounty household. It started out as a budgetary mechanism, but now we’ve got ourselves into a groove and it’s become a thing.

We just use a purchased bread mix and add bits to it, like ground flaxseeds or buckwheat. We buy a 5 kg bag, decant most of it into a food grade sealed bucket and put a kilogram or so into a smaller container in the pantry. When this smaller container is empty, it is refilled from the bucket by The Boy.

So, you can imagine my surprise when my request for the smaller container to be refilled from the bucket was answered with the words, “It’s empty.”

Ahem.

I’m still at a loss as to how the empty bucket wasn’t noted at the time it was emptied, so that it could be refilled before we ran out.

Anyway, moving on.

We needed bread. About this time, I remembered making Irish Soda Bread several lifetimes ago and that it had been well received – so I thought I’d give it a shot on The Boy.

It’s a very scone-like bread (half way to a damper) that toasts well and lets one consider one’s farm-dwelling ancestry a generation or two back. It’s also a great introduction to bread-making for those who are afraid of using yeast.

Ahem.

Unfortunately, its density means that it isn’t something that diabetics will be wanting to consume on a regular basis, but it is very yummy.

It’s a very simple recipe using basically plain flour, baking soda and buttermilk. We had all of these things.

So, into a largish bowl 800g of plain flour was poured. I had a bit of wholemeal plain flour in a jar, so I added it first and then made up the weight with some regular stuff.

It was all sifted on the way through, along with some salt and some baking soda. The bran from the wholemeal was added after.

I also added a tablespoon or so of golden flax seeds. Because I like them.

It was all stirred together thoroughly, a well was made in the middle, and a pint of buttermilk was added. Then it was mixed together with a heavy spatula (or I could have used a wooden spoon) until it came together as a firm dough. My bread needed more liquid, so I just added splashes of milk until I got that result. It’s important not to be too heavy-handed with this. It is a lot like scones, in that light handling will result in a lighter bread.

Then, with a light touch, I shaped it into a big ball – kneading it gently until it was only just smooth.

A tray was sprayed with cooking oil, the loaf was placed smack dab in the centre of it and brushed with a little milk. Then, following tradition, a cross was cut in the centre. This enables the bread to rise in such a way that the loaf maintains its shape on the way.

Then it was all baked in a moderate oven for just on an hour.

It really is that simple. Measure your flour, add your wet stuff and bake.

Let it cool on a rack and then treat as you would any other bread. Ours kept in the bread box in the pantry for 5 days after baking.

Once life is a little more settled (probably after we move) I’m intending to try experimenting with different flours and additives. I think this would be awesome with some rolled oats added in, just as a f’r’instance.

Ingredients

800g plain (All Purpose) flour. You may use a combination of different flours if you wish.

1 tsp salt

1 tsp bicarbonate of soda (baking soda)

600 ml  buttermilk

milk to glaze

Method

Heat the oven to 180ºC/350ºF.

Sift the flour, salt and baking soda together into a large bowl, adding back any bran left in the sieve. Mix well.

Make a well in the centre and add the buttermilk. Stir lightly and quickly until a firm dough forms. If loose flour is still evident, simply add milk a tablespoon or two at a time until it is all incorporated.

Turn onto a lightly floured surface and lightly knead and shape into a smooth round about 20 cm across.

Place onto a lightly greased tray.

Cut a cross about 1 cm (½ inch) deep into the top of the loaf.

Brush the surface of the bread with a little milk. This will remove excess flour and help the bread to get a lovely golden colour.

Bake for an hour, testing after 50 minutes. Bread is done when a skewer inserted in the centre comes out clean.

Lift onto a wire rack to cool.

 

How to make evenly-sized cookies – easily.

Anyone who has ever had to deal with judicially minded offspring or youngsters – you know the ones, “Muuuuum, it’s not fair! Her cookie is bigger than mine!” needs to be able to say “they’re all the same size”; and mean it.

Also, it’s sometimes a useful thing in the adult world to know that everything has the same amount of calories kilojoules bad stuff diet disasters  the portions are all the same size for planning purposes.

So, when I make cookies, I use a metal ice cream scoop with a 1 inch diameter to measure them out onto a paper-lined baking sheet.

This method means that they are all around the same size which helps with both portion control and arbitrating amongst the youngsters.

It won’t ensure that each child’s portion has the same amount of choc chips if they’re included in your cookie, but the rebuttal to that is that, if they are counting instead of eating, then they aren’t hungry enough for more cookies.

I bought my ice cream scoop on eBay. It was in a set of three, with the largest 2 inches across. They cost me something like $3 including postage from China, so the fact that I really only ever regularly use the one doesn’t bother me as a waste of money.

However, I do use the larger ones for scoops of mashed potato and pumpkin if I want to prettify a dinner serving or use them to top a cottage pie.

Double Chocolate Cookies.

The Boy's favourite cookies.

These are the cookies that are the way to The Boy’s heart. Every time that I make them for him he gets this far away look in his eyes and lights up like he’s just spotted a litter of kittens.

That’s good, by the way.

This recipe is basically a riff on the Condensed milk chocolate chip cookie recipe I have posted previously. I substitute a few tablespoons of the flour for dutch process cocoa, use chunks instead of chips of chocolate and add a sprinkling of sea salt. It all works.

I shall repeat the recipe with the tweaks in its entirety right here for you though. It will save lots of jumping about – although that may help you to deal with the calories…

Measure out your plain flour, add the cocoa ( I use Dutch process, but you don’t have to) and sift together with the baking powder.

Add the lot to your butter mixture and stir well.

Now, you may choose to use choc chips for this part of the recipe. I use a ‘family-sized’ block of dark cooking chocolate that I have placed in a paper bag and smashed to smithereens with a meat mallet. If you wish to smash things too then you can use whatever heavy implement you have to hand. Enjoy this bit.

For a really special touch, add a good pinch of sea salt flakes. The touch of salt serves to intensify the chocolate flavour beautifully. I haven’t tried this with milk chocolate, but with dark chocolate it’s pure heaven.

Stir to combine.

Use a metal ice cream scoop with a 1 inch diameter to measure out the cookies onto a paper lined baking sheet.

Press down gently on the top to flatten slightly and pop into a moderately hot oven for around 15 minutes. If you forget to flatten them, then bake for 20 minutes.

Not that I have ever forgotten this step, you understand. Ahem.

Leave them to cool for 5 minutes on the tray before removing to a cake rack to cool completely. They will still be soft when you take them out of the oven.

Also, DO NOT eat a hot cookie. Melted chocolate will burn. You have been warned.

75 g (2¾ oz) caster sugar

125 ml (4 fl oz) sweetened condensed milk

250 g (9 oz) plain or all purpose flour, minus 2 Tablespoons

2 Tbsps Cocoa

1 tsp baking powder

¼ tsp sea salt flakes

300 g (10 ½ oz) chocolate chips or chunks (or less, if you prefer)

Method

Preheat the oven to 180°C/350°F.

Line one or two baking sheets with baking paper.

Beat the butter and sugar together in a large bowl until pale and creamy.

Pour in the condensed milk and beat to combine.

In a separate bowl, sift together flour, cocoa and baking powder.

Add to the butter mixture and mix to combine.

Add the chocolate pieces and salt flakes and stir well.

Roll into tablespoon sized balls (or use an ice cream scoop) and place on the prepared baking sheets, leaving room to spread. Press down gently with your fingertips or a fork to flatten slightly,

Bake 15-18 minutes or until golden.

Remove from oven and allow to sit for 5 minutes before transferring to a cake rake to cool completely.

Cookies will harden on standing.

Condensed milk chocolate chip cookies (no eggs).

A full biscuit barrel is a good thing to have.

This is my go-to recipe when I want to make cookies that don’t require thinking.

It comes from a wonderful little book that I bought from Aldi a few years ago, called “Cookies, Slices and Squares.”  I’ve not made a great many of the recipes it contains, but all those I have tried have been amazing.

I like to have some home-made biscuits in the house for The Boy. I’ll make a batch once a fortnight or so, keep most of them in the fridge and put four or five into a tin on the counter for him to nibble with his hot beverage of choice.

The beauty of butter-based cookies like these, is that they are far too hard to eat straight out of the refrigerator. Also, the flavour is much better developed at room temperature…do you see my strategy here? Basically, I’m ensuring that he doesn’t scoff the whole lot at one sitting.

This is a cookie recipe. It’s much softer when finished than Aussie biscuits are – cookies have a ‘cakey’ centre where biscuits are the same hardness all the way through.

This recipe uses sweetened condensed milk instead of eggs. One tin of condensed milk will get me three batches of these cookies. I pour the leftover milk into little jelly jars and keep it in the fridge until I need it. One jelly jar is the exact amount I need for the recipe, so it works out well.

To this plain flour sifted with baking powder is added and stirred in well. The recipe then calls for MASSES of chocolate chips – 300 g of them. This is what a batter with that amount of chips looks like … just for reference purposes.

Now I am of the belief that no everyday snacking cookie requires this much chocolate in it. I have (obviously) made them with it in the past, but only for special occasions or for gifts. On some occasions I have made up the 300 g with a combination of different types of chips – dark, milk, white and caramel – and it has worked beautifully.

I usually make these with 100 g worth.

Swiss Roll

The first time I made a Swiss Roll I do believe it was in my Home Economics class and I was around 14 years old. That was over 30 years ago.

It was also the last time I made a Swiss Roll.

In case you haven’t picked up on this yet, Swiss Roll making isn’t a high frequency activity in my kitchen.

Anyhoo…I needed to make something for my Thursday lunch group.  It needed to be something simple and non energy-sapping. I’d just made a double batch of Lemon Butter and thought maybe some of that could be used in …  something?

Then I remembered that one of the ladies at the group is doing a cookery course and one of her assignments was a sponge cake filled with lemon curd.

‘What about a Swiss Roll?’ something whispered in the back of my head.

So I went with it.

I found this very simple recipe here on one of Jamie Oliver’s sites. I can honestly say it’s one of the easiest things I have ever made.

The hardest part was working out whether I had a Swiss Roll tin! I knew they were big and flattish but…so I asked Mr Google and found the answer resided here, with the ever delectable Nigella Lawson.

A Swiss roll tin is a specific tin that is designed to bake a thin, rectangular sponge cake that is then rolled up to make a Swiss roll (jelly roll or roulade). It has slightly raised edges (about 2 to 3cm/3/4 to 1 inch) deep and has dimensions of roughly 23 x 33cm (9 x 13 inches).

I had one of those. It was all good.

I also had all three (3!) of the necessary ingredients.

I used a stand mixer because I can’t hold things very well right now and I could just turn this on and block my ears. If you have a hand-held electric beater or whisk then go for it. If you have none of these things but are possessed of a balloon whisk and well-developed biceps, then feel free to join in the fun.

Heat your oven to 200°C/400°F.

Start with sifting a teeny amount of caster sugar into a bowl and add three eggs.

Whisk the two together until the mixture becomes thick and creamy.  This could take quite some time. I stopped at one point and decided to add some lemon zest to the batter just to tie it to the lemon butter a bit better. Not sure it made a measurable contribution in the end.

It still wasn’t thick enough though. You are looking for a thick, creamy looking batter. You’ll know you’ve reached the right point when the beaters start to leave a trail in the mixture, like this…

Put your electric beaters away; from this point on being gentle is your game plan.

Sift the Self Raising flour into a bowl and then sift it again into the mixture. Fold it through the egg mixture using a metal fork.

I might be the only person you know who uses a fork for this, but it works. Folding is basically the same as stirring, but in slow motion. You are trying not to beat out all the air that you have just beat into the egg mixture. Think of the flour as just being there to stabilise that structure.

Once all the flour is incorporated, stop.

Line your Swiss roll tin. Pour the mixture into the tin and spread out with a spatula. Again, be gentle.

Bake for 7-8 minutes, until lightly brown and fully set.

Now, this here is the secret bit so listen up!  I remembered this from Home Ec. all those years ago.

You’ve got to roll it up while it’s still warm and let it cool that way. That prevents cracks (and tears ) caused by rolling up a cold cake.

So, using the paper lining, pull the cake up out of the tin and onto a cake rack. Decide if you want to roll from the long side or the short and orient your cake accordingly. Mine was to serve a lot of people after a lot of food – small slices would do. I went for the long side roll.

Roll up slowly with the lining paper still on. This will stop it from sticking to itself when you need to unroll it later.

Then roll your roll up in a clean, dry tea towel. Leave it until it is completely cool.

Alternatively, you might wish to remove the backing paper and use a tea towel in its place so that the fabric is holding the cake apart. I didn’t have any tea towels without a pile to hand and that would have only ended badly.

When it is completely cool, unroll and fill with lemon butter if you wish.  You might also like to use jam, or thickly whipped cream. Just remember that you need to roll it up again, so don’t slather it on or you’ll have filling oozing out everywhere.

To serve, place on a serving tray and sprinkle with icing (confectioner’s) sugar – I forgot to take a picture of this bit. Sorry.

3 eggs

75 g caster sugar

75 g self-raising flour

2-3 tablespoons jam/lemon curd

Method

Heat oven to 200°C/400°F.

Grease and line a Swiss Roll tin with greaseproof paper.

Sift the flour onto a plate.

Place the eggs and sift sugar into a mixing bowl.

Whisk using an electric beater until the mixture becomes thick and creamy and the beaters leave a visible trail. About 5 minutes.

Sift the flour (for a second time) into the mixing bowl and gently fold into the mixture using a fork.

Pour the mixture into the prepared tin and spread out gently with a spatula.

Bake for 7-8 minutes.

Turn out of the tin onto a cooling rack and gently remove the backing paper.

Roll up using a clean, woven tea-towel and leave until cool.

When cool, unroll and spread with your desired filling.

Re-roll. Place on serving dish with the edge of the roll on the bottom, and sprinkle with icing or confectioner’s sugar.

Slice to serve.

 

 

 

Apple and Oat Bars

Last night, The Boy declared – out of the blue – that I should do a muesli (granola) bar recipe. Because school goes back next week or something and this could be useful to people.

I think he just wanted muesli bars.

I also think he could have told me before I did the fortnight’s shopping and could stock up on the expensive stuff that goes into these snacks.

So, I compromised. I’m good at that.

I made these little Apple and Oat Bars from stuff I already had and which – most likely – you already have too. Because that is how we roll in the Budget Bounty kitchen.

The recipe for these came from one of the first cookbooks I ever bought for my now massive collection. It’s called Good Cooking by the people at Good Housekeeping and was published way back in 1988. Which is why I have changed one of the ingredients from margarine to butter…

It’s a recipe that literally takes only minutes to put together and which you could quite easily do with smaller versions of yourself HELPING.  Ahem.

You will need some butter, some honey, some brown sugar, some rolled oats and an apple or two. Also a bowl, a baking tin and a microwave proof jug and spatula.  Sound complicated?

After setting your oven to 190°C get out a set of scales and your microwave proof jug. Into your jug measure your butter, brown sugar and honey, like so:

Heat them for 1 minute at a time at 80% power until the butter is melted. You can do this in a saucepan on the stove, if you wish.

While it is melting, measure the oats into a medium sized mixing bowl and line a baking tin with parchment. The original recipe called for an 18 cm/7 inch square cake tin.

Pour your now liquid ingredients into the oats and mix well.

Add the wet to the dry. Stir.

Press half this mixture into the base of your tin. Do NOT do what I did and use a silicon tray. You want the oats to crisp up and they just get soggy if you follow my example. Honestly.

Now get a large cooking apple (around 250 g worth), peel it and slice it thinly.  Arrange the apple slices in overlapping rows to cover the oat base.

Sprinkle your slices with cinnamon. I was cooking for an adult who likes it, so I also used ground ginger on mine.

Top with the rest of the oats, press down firmly and bake for 30 to 40 minutes or until golden brown and crisp.

Cut it into portions while still hot and in the pan. Leave in the tin to cool. You want your butter and honey to set before you try to move anything, or it will all fall apart.

Ingredients

100 g/4 oz butter

60 g/2½ oz brown sugar

2 tbsp honey

225 g/8 oz rolled oats

1 large cooking apple (250 g/9 oz) peeled, cored and thinly sliced

Method

Heat oven to 190°C/ 375°F.

Lightly grease or line an 18 cm/ 7 inch square shallow baking tin.

In a microwave proof jug or bowl, combine the first three ingredients and heat at 80% power for 1 minute intervals until melted. Stir together. This may be done in a small saucepan on the stove top if wished.

Measure the oats into a medium-sized bowl. Pour liquid ingredients over the oats and mix well.

Divide the mixture in two and press half into the base of your prepared tin.

Arrange the sliced apple over the top of the oats in overlapping rows.

Sprinkle with cinnamon.

Top with the remaining oats and press down gently.

Bake for 30-40 minutes until golden brown and crisp.

Cut into slices while still hot and then leave in the tin until cool.

Variations:

  • For a gluten-free version, substitute a gluten free muesli or granola mix for the rolled oats.
  • Try using different spices for variety. A Pumpkin Pie spice mix might be just the thing for you.
  • Sprinkle a handful of sultanas over with the cinnamon.
  • Add a scattering of choc chips over the apple for a special treat.

 

Caraway and Lemon Biscotti

Grind the caraway seeds in a pestle and mortar.

I created these by adapting a recipe I found in a book compellingly entitled Moosewood Restaurant Low-Fat Favourites, which I believe I bought in a Barnes and Noble store in Baltimore, Maryland, sometime in 2006.

It was originally a recipe for Anise and Lemon Biscotti, but I didn’t have any Aniseeds, and didn’t want to go buy some, so I substituted caraway seeds instead.

I also found the dough was too dry at the end of mixing it. However I’d had to zest a lemon for the recipe, so I juiced that and mixed the juice into the dough.

It was a triumph. A little piece of citrusy heaven. Trust me. If you like lemon-flavoured anything, then you’ll love these.

They are among the most requested in my Christmas Collection and now I share them with you.

They are the perfect thing to enjoy a quiet moment with a cuppa before going back to being an adult.

Start by sifting the plain flour, baking powder, salt and sugar together into a bowl.

Then add the zest of a lemon or two. You’ll need around 2 tablespoonfuls.

Now you’ll need to grind your caraway seeds the best that you can. Use either a pestle and mortar or a small electric coffee grinder you use solely for this purpose.

Add them to your flour mix, stir through and set aside.

In a separate bowl, lightly beat together 2 whole eggs and 1 egg white.

Add the egg mixture to the flour mixture and stir to achieve a smooth dough.

If you manage to do that with just the eggs, then you have my congratulations.

If not, then juice the lemons that you have zested and add the strained juice to your dough – little by little – until it all comes together.

Line an oven tray with baking paper. Using a spatula and floured hands, scoop half the dough out of the bowl and onto one side of the baking sheet. Repeat on the other side.

Shape as best you can into logs. Remember that they will spread as they bake, so try to keep the inner edges at least 6 inches apart.

Bake at 180°C/350°F for 25 to 30 minutes, or until the top of each log is firm.

(This is the perfect time to wash your mixing bowl and other utensils.)

Remove to a wire rack until cool enough to handle – around 15 mins. Reduce your oven to 150°C/325°F.

Now is the time to cut them into 1.5 cm/½ inch thick slices with a serrated knife.

Then, place them back onto the baking sheet, cut side down.

Bake for a further 15 minutes. Remove to cool on racks.

They will firm up on standing, so don’t be concerned if they still seem soft in the middle.

1 tbsp freshly grated lemon peel (zest)

Method

Preheat the oven to 180°C/ 350°F. Line a baking sheet with paper and set aside.

Sift together the flour, baking powder, sugar and salt.

Add the lemon zest and ground caraway seeds.

In a small bowl, lightly beat together the whole eggs and egg white.

Add the egg mixture to the flour mixture and stir to form a smooth dough. Add lemon juice as required to achieve the correct consistency.

Using floured hands and a spatula, scoop half the dough into a log shape on one side of the prepared baking sheet. Repeat with the rest of the dough on the other side – spacing the logs at least 6 inches apart.

Bake for 20 to 25 minutes, or until the top of each log is firm.

Remove with a long spatula to a wire rack and cool for 10 to 15 mins.

Reduce the heat of the oven to 150°C/325°F.

Using a serrated knife, cut each log on the diagonal into ½ inch slices.

Place slices back onto the lined baking trays, cut side down and bake for a further 15 minutes.

Remove and cool on racks.

These biscotti will continue to harden as they cool.

Will keep for several weeks, stored in an airtight container.

This is another dish that builds on one covered previously – good old Scones! It’s moreish and quite delicious.

It’s also very easy. Actually, it’s almost criminally easy.

Criminal in that there is very little incentive not to just make a batch each and every day.

I created this dish in an attempt to recreate the apple scrolls I’m quite fond of getting from a local bakery. However, during our current budgetary regime, I simply can’t justify paying $4 for one of them. I can make a whole batch of these (8) for less than $2. Honestly.

It also takes about 30 mins from start to finish. Make it with the kids and then get them to make it for you. Often.

Herewith: start with a batch of scone dough. You’ll find the recipe here. Go make that up right now. We’re happy to wait for you. Once you get to the bit where you flatten it out, stop and head back here.

Now spread this over your scone dough as evenly as you can.

Roll it up from the long side and gently cut into evenly sized pieces.

Line a baking sheet with paper. Don’t miss this bit or you will have a big clean up job to do! Then place your slices on the paper cut side down. Squeeze them gently to round out any flattened edges. If you wish, you can brush with a little milk to aid in browning.

Bake for 10-15 mins, until a skewer inserted in the centre comes out clean.

Can you see that shiny brown stuff on the paper? That’s caramel. Aren’t you glad you lined the pan?

Thought so.

Transfer the cooked scrolls to a rack wrapped in a clean cloth to keep them soft. Serve when you can resist no longer.

¼ cup brown sugar

1 tsp ground cinnamon

1 cooking apple e.g. Granny Smith

Method

Heat the oven to 230ºC/ 475ºF.

Prepare the scone dough and then pat out into a rough rectangle.

Mix the brown sugar and cinnamon together.

Peel the apple and dice finely.

Mix the apple thoroughly into the sugar mixture.

Spread the apple as evenly as possible over the scone dough.

Roll the dough from the long side, making a sausage shape.

Cut into 8 even pieces. Start by cutting in half, then cutting each half in two and so on.

Line a baking tray with paper and place the slices of the roll onto it cut side down. Squeeze gently into a rounder shape.

If you wish, brush the tops of the scrolls with milk to make them brown nicely.

Bake 10-15 mins until a skewer inserted in the centre comes out clean.

Cool in a clean cloth to keep soft – or serve immediately.

Variations:  scatter a handful of chopped walnuts or pecans over the apple mixture before rolling up.

So, you’ve made yourself some Dulce de Leche, or even some Lemon Curd – now what?

Make these.

Simple, tasty, made from things you’re likely to have already and hiding a sweet(er) surprise, what’s not to love about these morsels?

You now you want one.

You know you want one.

A batch or two of muffins mixed up on a Sunday afternoon and stored in an air-tight container can provide you with a week’s worth of school/work lunch treats. That can save you quite a bit of money over the medium to longer term, especially if you provide your own beverage as well.

They taste better than most mass-produced cakes (there’s a certain floury taste to things made from a premix) and you get to look mysterious when people beg you to tell them where you bought them…

Get picky. Eat only the best, and that usually means things made from scratch – it doesn’t mean things that are too difficult to make yourself. I promise.

These particular muffins make use of things you’ve already learned how to make here: dulce de leche and/or lemon curd.

Before I start to guide you through it, though, just a quiet word. Muffins are sensitive souls. They need a gentle touch – one that will let them know they are loved and then leave them alone…

In other words, don’t overmix them!

As soon as all the flour is incorporated, stop. Just stop. That is all.

Treat them gently, and you too could have a platter that looks like this.

If you do happen to overmix them, it simply means your muffins won’t rise as much and will be slightly denser in texture.

This is not a tragedy.

This is a reason to try again and see if you can improve your results.

Preheat your oven to Moderately Hot.

Start by sifting your Self Raising flour and baking soda together into a large mixing bowl.

Add your brown sugar, but be careful to pack it into your measuring cup first! When you tip it into the mixing bowl it will look like those sand castles you used to make with your bucket at the beach.

Mash it up with your spatula or wooden spoon to get rid of lumps and stir into the flour.

How are you doing so far?

Believe it or not — you’re nearly done!

Melt your butter. This can be done in a small saucepan over a low heat on the stove, or in a microwave.

I use a pyrex jug for mine and zap it at 50% for a minute and then repeat until it’s liquid. Then I stir the buttermilk into the milk.

If you can’t find buttermilk anywhere, then a 50/50 mix of plain yoghurt and milk will also work; alternatively add a tablespoon of lemon juice or white vinegar to a cup of milk and wait 5 minutes.

Break your egg into your butter mixture and whisk well with a fork.

Then make the ever-necessary well in your flour and pour the liquid into it.

Then stir – quickly and gently. Try stirring around the outside and then slicing underneath. It’s hard to describe and I think I may need to post a video at some stage.

In the meantime…just don’t beat the life out of it.

When all the ingredients are just combined. Stop. This is not a cake batter, it will not be smooth and liquid. It will look lumpy – like this.

Place some muffin cases into your muffin tray. You could just grease the cups, but the paper cases make eating your snacks a much cleaner experience, means they don’t stick together when stored and also make it easier to pack them for lunches.

If you don’t own a muffin tray (I’ve had mine for nearly 20 years, add it to your list.) then use a flat baking sheet or pizza tray and place double thickness muffin cases on top and close together. You could even do this in a cake tin, if you wished.

Dollop spoonfuls of the mix into the bottom of your muffin cups. Don’t spread or smooth the batter, just leave it as it falls.

Now for the fun bit. Deploy your fillings. I used a teaspoonful of dulce de leche per muffin in this example. It’s quite sweet and I thought that would be sufficient. You may use more, of course!

I would use a tablespoon of Lemon Curd for this purpose, but it’s still up to you (and how much you have to hand!)

It helps to fill a coffee cup with boiling water and dip your metal spoon into it before dipping it into your cold filling. The heat will cut through the cold caramel and help it to slip nicely off into the cups. There is no need to dry your spoon between dunkings.

Now cover your caramel with the rest of the muffin mix.

Pop into your hot oven to bake for 20 mins, while you wash up ;-).

If your oven is not fan-forced, you may wish to rotate the tray at the half-way point to ensure even browning.

When done, test by inserting a toothpick or skewer into the center of the thickest muffin. If it comes out clean of raw batter, it’s cooked. Just remember you may hit caramel or lemon curd too!

Allow to cool in the tray for 10-20 mins and then move to a cake rack to cool completely. Set up a guard if you wish to keep them for lunches during the week to come…

Chocolate-Hazelnut Muffins: If you tire of using your Dulce de Leche or Lemon Butter in these, and the budget permits, then try sifting a ¼cup of cocoa in with your flour and using a cup of Nutella to fill with.

Ingredients:

2½ cups self raising flour

½ tsp bicarbonate of soda (Baking Soda)

½ cup brown sugar, firmly packed

125g butter, melted

2 eggs, lightly beaten

1 cup (250 ml) buttermilk

2/3 cup Dulce de Leche or Lemon Curd

Method:

Grease a 12 hole muffin pan, or line with paper cases. (I find this makes transporting them a lot easier.)

Heat your oven to Moderately Hot – 200°C or 400°F.

Sift flour and bicarb into a large bowl.

Add brown sugar and break up any lumps as you stir them together.

In a pyrex measuring jug (for ease) heat your butter in a microwave for 1 minute at 50% power. Repeat until melted. (This step can be done in a small saucepan over low heat if a microwave is not available.)

Add butter milk to jug and whisk together, then add eggs. Mix liquid thoroughly.

Make a well in your flour and pour in all the liquid at once.

Fold together until just mixed. DO NOT BEAT!

Cover the bottom of your muffin cups with a tablespoon or so of the batter.

Place a spoonful or so (it is up to you how generous you wish to be…) of your caramel or lemon curd on to this and then top with the rest of the batter.

Bake on the top shelf of your oven for 20 mins, rotating the tray halfway through.

Test for doneness by inserting a toothpick or skewer through the thickest part of a muffin. If it comes out clean of batter, it’s done.

Leave to cool in the muffin tray for 20 mins or so, before removing to a cake rack to cool completely.

Store in an airtight container.
